This is the best steak I have ever had. We came here for our work Christmas dinner and between 3 of us we shared nearly a 2kg cut of the “Rubia gallega” Tuxuleton. Now Basque steak is not like ordinary steak, the beef is reared from an old cow (typically older than 7 years), whereas normally Steak cuts from around the world are taken from young cows and then aged. The Basque cuts however take on a much beefier flavour, and the fat takes on a more yellower colour and the marbling and colouring becomes, more ruby red. Honestly this steak was mind-blowing and I can’t recommend this place enough, it was amazing.
